Easing In

So, the first meal of the day presents some challenges to those of us who are accustomed to cream in our coffee and oats in our meal…

Unsweetened almond milk or coconut milk can be pleasant dairy alternatives for your coffee. I, however, do not prefer to drink coffee unless I can dump an equal amount of half and half in my cup. Instead, I switch to tea and almond milk.

Additionally, I often miss the days I could dump a packet of Quaker’s Instant into a bowl and throw it into the microwave for a minute. I’ve learned, however, that you can do a similar trick with eggs:

Put two eggs in your favorite mug. You can add a tablespoon of coconut milk if you like. Whisk it up if you like. Microwave for 45 seconds.

Pull the mug out and stir/chop. Microwave for another 30 seconds.

Delicious, fluffy, scrambled-y eggs in a mug. Top with some salsa or avocado (or both!) for a real treat.
